
L’Ambroisie of Mirabel transforms only the maple sap collected on site into alcoholic beverages, thus ensuring year after year, they hold the same savours of the soil. Aceritives (maple wines) and Acervescents (sparkling maple wines made by the traditional method) are exclusively produced in stainless steel tanks to preserve the freshness of the products and enable them to slowly develop their whole aromatic potential.
If initially the first productions were done by the owner, Mr Michel Roy, we now work with an experienced international oenologist, Mr. Jérémie D'Hauteville, which allow us to perfect our techniques and also to offer hosts products of a growing quality
Mr. D’Hauteville is a graduate from the Agro-Montpellier of France and is not only an oenologist. He is also specialized in vines growing and can solve all the physical, chemical or biological problems that the culture of vines can poses in Québec where he has been working for the last few years. As International experience, he started his career in the region of Laguedoc-Roussillon, France and also in Lebanon.
Jérémie D’Hauteville has one objective: improve his art. Like he says:
