Our maple vinegar is the result of two fermentation processes. The first one is identical to the one used for alcoholic beverages where fermentation is caused by yeasts which transform the sugar found in maple into beverage which percentage of alcohol is approximately 9%. This liquid is then left for another period of fermentation where a bacterium converts the alcohol into acetic acid, which is also known as vinegar.
Remarks Maple vinegar is special in the fact that it's very mild and just like precious nectar, a few drops are sufficient to add a special touch to your dishes, even the simplest ones. When cooking, it should be added at the end of your recipe in order to prevent the evaporation of the flavors that set it apart. Try it with your favorite dressing to create a marvelous new taste.
